Ever since I became a working momma again, we pretty much eat the same thing all the time for dinner. I just simply don't have time to really plan out different meals, and experiment with new things. However, every once in a while, I see something on Pinterest and just know that I have to make it! If you are looking for a delicious and quick meal, this is the perfect meal for you!
Spicy Chicken Queso

Ingredients:
1. 16 oz of Velveeta Cheese
2. 1 package of chicken breast. I used 1.26 pounds
3. 1 can of black beans
4. 1 can of corn
5. 1 can of rotel
6. Crushed tortilla chips
1. In a large baking dish I cut my chicken breasts in half, and placed them in the bottom of the pan.
2. I then layered the black beans, corn, and rotel on top of the chicken.
3. I diced up half of a 32 oz block of Velveeta cheese, and placed the cheese on top of the chicken and vegetable mixture.
4. Cover the pan with tin foil and bake at 375 degrees for 45-55 min.
5. Serve with crushed tortilla chips, and enjoy!
