I have had a Zupa Tuscana recipe pinned for years. I never once made it because I thought it was going to be too difficult. Boy was I wrong! The recipe I am about to share with you is spot on for the original recipe at Olive Garden, and it took little effort to make! I hope you enjoy!
The original recipe I used you can find here, however I did a few substitutes to make prep time super easy!
Ingredients:
- 2 tsp olive oil
- 1 pound Italian sausage, hot or mild
- 4 oz bacon, diced into ½ inch pieces
- 1 cup of frozen diced onions
- 5 cups low sodium chicken broth
- 2 cups water
- 2 cans of sliced potatoes
- 1½ tsp sugar
- salt and fresh ground pepper
- 2 cups half and half
- 1 cup packed kale chopped into bite size pieces
- 1 cup finely shredded Romano cheese for serving
Directions:
1. Cook sausage in olive oil until cooked thoroughly.
2. Using remaining grease, add in the bacon and onions, and cook until bacon is cooked thoroughly but not crispy.
3. In a separate pot, add the potatoes, kale, water, chicken broth, sugar, and salt and pepper. Once brought to a boil, add in the sausage and bacon/onion mix. Let simmer for about 20 minutes on med-low heat. Then add in your half and half and let simmer for another 5 minutes on med-low heat.
4. Enjoy! Top with cheese for serving!
